Has anyone used a usb-scsi adapter with a G3 iMac? Want to use
some of my scsi stuff with it.

Yes. I have the Belkin USB-SCSI dongle. It's USB sloooow, but it gets the job done. A bigger problem will be finding compatible drivers for things like scanners.
