Are there any email clients from Mac OS 7.1 or 7.5 that could run on either a 68000 or 68030 processor that are capable of connecting to gmail?

What about 8.1 on an 040 processor?  I imagine that is modern enough to support an old version of Outlook Express.

None support modern enough TLS. You need something like stunnel running on your network to connect to that will strip the TLS away for you. Then it's a matter of picking between IMAP and POP; I strongly recommend IMAP.

Ah I see. Would running stunnel on something like a raspberry up or other spare system compromise the security of my email account if someone hopped onto my wifi?
