Hard Drive Options for Power Mac 7200?

Way back when, before they became unobtainium, the SCSI drive replacement for Power Mac 7200s was a Sonnet Tempo ATA PCI card with an ATA drive. That was my go-to anyway.

What are the available options these days? Is it limited to SCSI2SD and similar SD solutions? Or are there options that would allow you to use an actual SATA hard drive or SSD?

That's still a solid option for sure, but you have a couple more options as well.

1. SCSI2SD or similar bluescsi etc.
2. ATA PCI Card with ATA drive can also get those ata to sata adapters but not sure if I've seen reports of those being used with ata pci cards.
3. SATA PCI card, lets you go direct to sata drives.
4. Firewire PCI Card, not 100% sure on this one, I don't know if that was ever a bootable option for these older machines but it might be possible not sure why you'd want to but anyhow.

I can absolutely recommend the SATA card! I bought this one (https://www.ebay.ch/itm/254669346388?ssPageName=STRK:MEBIDX:IT&_trksid=p2060353.m1438.l2649) for my Workgroup Server 8550 and now it feels about 3x faster than before... You don't need any drivers and you can even boot system 7.5 from it!
