I have looked at every resource for old macs that I can find. They all say this machine came with 2x 9GB SCSI drives and corresponding card. But no one says WHICH card it came with. Can anyone shed any light on this for me? I have a handful of 9GB LVD drives but their pinouts is different than any of the SCSI cables I have and since they are from the same era I am trying to figure out why none of my stuff matches up.

i would guess standard 50 pin SCSI rather than LVD SCSI was standard with a pricy option for LVD card. I have G4 (non servers) and G3's (non servers) with both types of cards so I would guess it was an option either way. My first mac I bought was a G3 with SCSI option that was just the 50pin internal with an external connection for standard mac scsi devices (which I had a CD burner).

Is there any info that says which card exactly? So that if I wanted, I could have it to spec?

The Power Mac G3 Server came with an Apple branded ATTO card which had a sticker covering the external 68 pin SCSI port and had internal 68 pin and 50 pin connectors. It was bootable and was only UW-SCSI (40 MB/sec), if I remember correctly. It was the equivalent of the ATTO ExpressPCI PSC but with that sticker.
