Headphone and Mic jacks

What purpose do these serve on the older compacts? 

Did they ever have a use for loading or saving to tape?

Purely for sound. Macs never had any specific audio-based data transfer functionality, the way Apple IIs did.

Any system that has both mic and headphone, Apple considered good enough for sound-related tasks - whether it's simple memos or actual production work depends a lot on the machine and the software you had.

There's that MacPhone that showed up in the eBay finds thread. I think it uses the headphone port to send phone numbers to the phone.
