Assuming I maxed out the RAM and maybe overclocked it, would it even be usable? maybe if I don't run X?

It would be very usable, but only in command-line mode.
Overclocked and maxed out, it would be bearable with VERY low-resource X windowing environment - but it would still be slow to the point of tedium.

I would do NetBSD. Seriosly. NetBSD + JWM and you can use X.
