Each of those folks on television is supported by a small team (1 - 4 people) in a back room somewhere, with voice communication channels, and, back then, a pneumatic tube system for quickly transferring documents, just like a drive-up bank teller. During Loss of Signal (LOS) (before TDRSS was completed, Tracking Data and Relay Satellite System) we would make runs to the nearby Burrito King and send the proceeds to the folks in the main room through the pneumatic tube system.
Do not send carbonated drinks through the pneumatic tube system....
